Green Goddess Dressing- Jazz up your Power Bowl

Last weekend a group of us headed to Nelson, BC to celebrate friends’ 20 year wedding anniversary. It was a hoot. Three days of non stop fun – hiking, touring, exploring, shopping and eating!! Nelson is home to the Kootenay Co-op, that I of course had to go in and check out. I came across an in house made Green Goddess Dressing. I LOVE recreating great dressings for bowls and salads and decided to take a shot at it when we got home. My sweet hubby, who is super supportive of my plant-based passion, said he thinks this dressing is his favorite one yet. He has been slathering it on crackers and adding it to his veggie wraps all week. I would have thought he would have started to get sick of it. Nope…

(Just as a quick side note on Nelson, BC… If you go the northern route and take the ferry through Nakusp, make sure to stop in at the seasonal Tasty Times Vegan Eatery food truck. It’s freaking delicious food, created by the sweetest young gal running the show! Check out the apron I got in Nelson… Greens Aren’t Boring, You’re Boring. Crack me up! Sprout Plant-Based Eatery in Nelson is a licensed, lunch/dinner spot that is a must visit gastronomic celebration. It was my favourite place we dined at, and we were only there for lunch! For a little treat, make sure to stop for some ice cream at Celestial Scoop next door. The entire shop is vegan and their Lemon Ginger flavour is the BOMB!)

Okay, back to the topic of the Green Goddess Dressing. In my opinion, power bowls deserve to be covered in a decent amount of sauce. I find it helpful to have a few go-to dressing recipes that create a killer power bowl experience. Buying sauce iart the store is certainly an easier option, but the high oil and calorie content kind of take all of the fun out of it. Who wants a dressing that is mostly oil and 90 calories a tablespoon?!

This Green Goddess Dressing can be made with either low, or no, oil. It is packed full of parsley, in fact, it is the main ingredient. It also contains onion, garlic, nutritional yeast and basil. All dynamite ingredients. It is full of flavor with simple, healthy ingredients! NO guilt, so indulge in the sauce!

The Green Goddess dressing can go on any variety of power/buddha/energy bowl you make. (Whatever you like to call it…) It is also great as a sauce for pasta, potatoes, fries and perogies. If you thin this dressing out with a touch of water, it can also be used as a salad dressing!

Some health benefits of parsley:

  • Parsley helps neutralize particular types of carcinogens.
  • It contains high levels of myricetin (a flavonoid), that has been shown to help prevent skin cancer.
  • Apigenin is a natural chemical found in parsley that is shown to reduce tumour size in an aggressive form of breast cancer.
  • Parsley is very high in vitamin K which appears to help in bone strength.

How do I assembly a Power Bowl?

The world is your oyster! A power/buddha/energy bowl is really just a variety of whole food ingredients placed together in a bowl! You can use any favourite foods you have on hand in your fridge and pantry. Below are some suggestions, showing what I used.

In the first bowl photo, many of the ingredients are covered up, but it contains: brown rice, steamed broccoli, corn, edamame beans, sprouts, pumpkin seeds, green onion, sauerkraut and air-fried tofu.

The second bowl contains: farro (a delicious nutty tasting whole grain that you cook just like rice), roasted sweet potatoes, beets, scarlet runner beans from my garden (whoot-whoot!), yellow peppers, spinach, grated carrots and almonds.

This is the perfect recipe for a group or just having friends and family for dinner. You can prepare all of the ingredients in advance and have guests choose their own toppings, or you can prepare the bowls yourself to serve. Just make sure you have loads of the Green Goddess Dressing as it gets enjoyed quickly!

Green Goddess Dressing

Serves: 4-5 Prep Time:
Nutrition facts: 200 calories 20 grams fat

Ingredients

  • 1 cup parsley, packed, with stems trimmed
  • 3 tablespoons tahini (sesame butter)
  • 1 green onion
  • 1/4 cup nutritional yeast
  • 3 tablespoons water
  • 2 tablespoons apple cider vinegar
  • 1/4 cup packed basil
  • 2 cloves garlic
  • 1 tablespoon Bragg's Aminos or soy sauce
  • 1 tablespoon white wine vinegar
  • 1 tablespoon lemon juice
  • 1 tablespoon olive oil (or substitute with water for a no oil version)
  • 1 teaspoon miso (optional)

Instructions

  1. Place all ingredients into a high powered blender. I like to double this recipe as it lasts well in the fridge. 
  2. Blend on high for a couple of minutes until smooth.  
  3. Add a bit of water to thin out if needed. 
  4. Store in fridge until ready then use at room temperature for best flavour.
