Killer Chocolate Peanut Butter Squares

This recipe is a take off of my post called Raw Vegan Peanut Butter Fig Bars. My girls love Reese’s Peanut Butter cups so I am always trying to come up with an alternative to them buying and eating those!

Reese’s cups contain PGPR, a controversial ingredient used as an emulsifier (in place of cocoa butter because it is cheap). They also contain TBHQ, an additive that causes abnormal reactions in the immune system that triggers food allergies.  

See what the Food Babe has to say about her research into TBHQ here. Those darn little cups also contain partially hydrogenated vegetable oil as well as dairy.  Ugh.  

I have a thing for trying to make everything we eat healthier, so I hope you enjoy these and can at least feel a little better about what you are treating yourself to!  

This version is certainly not a health food, but it gets a better rating because of the short list of natural ingredients and no chemicals. Honestly, I’d suggest making them to take to a party to share or you just might struggle with your self control!

These are super simple to make and don’t require any baking.  They should stay in the freezer until just before eating as they tend to get pretty soft if they sit at room temperature for too long.

Killer Chocolate Peanut Butter Squares

Ingredients

  • 1 cup melted dark chocolate chips
  • 1 cup smooth peanut butter (only ingredient should be peanuts)
  • 2 tablespoons coconut oil
  • 2 tablespoons of coconut nectar or maple syrup
  • 1/2 tsp fine sea salt
  • CRUST:
  • 1 cup dried figs
  • 1 cup walnuts

Instructions

  1. Remove fig stems and soak them for 10 minutes in hot water if they are dry.
  2. Drain figs, then place them with the walnuts into a food processor.  Process until they start to stick together.
  3. Pat the crust down into a greased 8x8 glass dish.
  4. Melt the chocolate and coconut oil in a double boiler, or directly on stove, being careful not to overheat.
  5. Blend the peanut butter, chocolate, sweetener and sea salt together in a Vitamix or blender until creamy.
  6. Pour the contents of the blender on top of the crust.  Freeze for an hour or until hard. These are quite sweet so can be cut into tiny pieces. Enjoy!
