Raw Vegan Peanut Butter Fig Bars

Ok folks, these spell trouble, but if you can eat just one, you are golden. 🙂

A friend sent me this recipe that she found online at www.amandanicolesmith.com.  They looked delicious so I had to try making them.  

I doubled the recipe which may have been a mistake for my sugar consumption…  I have to say they are super simple to make and taste like peanut butter and jam.  

I love the crunch of fig seeds so if you do too, this is the recipe for you.  I’m not saying they are “healthy” with the coconut oil and sugar, but they are a far cry better than the desserts out there with all of the dairy, trans fats and preservatives!

Raw Vegan Peanut Butter Fig Bars

Nutrition facts: 200 calories 20 grams fat

Ingredients

  • 2 cups peanut butter1/2 cup coconut oil1/8 cup sweetener - coconut nectar, maple syrup or agave1/2 tsp sea saltCrust:1 1/2 cups dried figs (soak first or use moist figs)1/2 cup walnuts 

Instructions

  1. Cut off the fig stems.
  2. Blend together the walnuts and figs in a Vitamix or food processor until they start to stick together.
  3. Pat the crust down firmly into an 8x6 glass dish.
  4. Blend together peanut butter, coconut oil, sweetener and sea salt if your peanut butter is unsalted. Pour the mixture onto the top of the crust.
  5. Freeze the bars for an hour or so until hard. Store in the fridge for up to two weeks.

I would imagine these would be amazing with almond butter instead of peanut butter as well.
