Shauna’s Chipotle Taco Wraps – KB & Co. Copy Cat recipe

One of my favourite meals to eat for lunch in Kelowna is the Chipotle Taco Wrap at KB & Co. on Lakeshore. It is saucey with a bit of spice, filled with nut meat, quinoa, black beans, avocado and crunchy lettuce. Seriously divine! Do you ever love a meal so much that you just want to be able to make it when you can’t go out for lunch? I do! Here is my version: Shauna’s Chipotle Taco Wraps!

Spring is coming! You can feel it in the air. These are the perfect “to go” wraps for the beach, a hike, or just to pull out of the fridge when you have guests. (We ARE going to be able to have guests this summer, freaking Covid!)

What makes this wrap interesting?

Two things… the Sun-dried Tomato Walnut Meat and the Chipotle Cashew and Garlic Sauce!

Why is this wrap so healthy?

This wrap is whole-food plant-based and almost completely raw. There is no heating or cooking required (other than if you use quinoa), which makes it easy and nutritious. You can’t beat the combination of black beans, corn, avocado, walnuts, onions, sun-dried tomatoes, romaine lettuce all in a chipotle sauce! This wrap is heart healthy, full of fiber, antioxidants, vitamins and minerals, all with no added oil. Yum.

All you need to do is blend together a few ingredients for the Chipotle Garlic Sauce, chop a few ingredients for the walnut meat and prepare the toppings.

The walnut meat and the Chipotle Garlic Sauce both freeze very well, making this a perfect make ahead recipe. I found we only used half of the nut meat and sauce so I just popped the rest in the freezer for another time. So you can literally make it once and have it twice. 🙂

Shauna's Chipotle Taco Wraps

Ingredients

  • WALNUT MEAT INGREDIENTS:
  • 2 cups walnuts, finely chopped
  • 4 tablespoons water
  • 2 tablespoon lemon juice
  • 2 tablespoon nutritional yeast
  • 2 tablespoon sundried tomatoes, packed & finely chopped (optional)
  • 1 teaspoon garlic powder
  • CHIPOTLE SAUCE INGREDIENTS:
  • 1 cup cashews, (soak in hot water for an hour if you are not using a high powered blender)
  • 3/4 cup water
  • 2 cloves garlic
  • 1 tablespoon lemon juice
  • 1/4 teaspoon chipotle powder (add up to double if you like spice)
  • 1/4 teaspoon black pepper
  • 1/8 teaspoon salt
  • (Blend all ingredients until smooth.)
  • REMAINING INGREDIENTS AND TOPPINGS:
  • 6-8 large whole wheat tortilla wraps
  • 1 can black beans, drained and rinsed
  • 1 cup cooked quinoa
  • 1 cup romaine lettuce chopped and kale
  • 1/2 cup corn
  • 1/2 cup red onion, chopped finely
  • 1 avocado, diced
  • 1/2 cup baby tomatoes, diced OR, Pico De Gallo salsa
  • 1/4 cup vegan sour cream
  • a handful of chips, such as bean or tortilla chips, crushed

Instructions

  1. In a medium sized bowl, add all 'walnut meat' ingredients and mix together with a spoon, or put into a food processor for a smoother version.
  2. In a high powered blender (Vitamix), blend together all Chipotle Sauce ingredients until smooth. 
  3. Prepare the remainder of the wrap ingredients.  
  4. Using 6-8 wraps (depending on how full you like to fill them), start by spreading the Chipotle sauce around the wrap, then add the walnut meat, crushed chips, beans, corn, quinoa, onion, romaine, kale, tomatoes and avocado.  Spoon on a little extra sauce and vegan sour cream if you like. 
  5. Taking the edge of the wrap closest to you, roll the wrap away from you gathering up ingredients under the tortilla and pulling them towards you.  Next, fold in the left side, then the right side.  Tightly and carefully roll the wrap away from you.  
  6. You can use parchment paper, a recyclable food wrap, or a napkin to double wrap your tortilla to help hold it together.  
  7. Enjoy!  These are perfect to premake for a picnic, hike, etc.  Both the nut meat and the chipotle sauce freeze very well for later use.

Notes

Don't feel you have to use all of the ingredients suggested. In the photos, I didn't use quinoa, chips or kale.

This was very tasty and easy/quick to make.
Also, I took your advice and watched What the Health on Netflix last night. It was very impactful – we will definitely be eating more plant based. Thanks for helping us do that.
