Queso Dip

Like many of you, I have a love/hate relationship with Costco. I love checking out the nifty products they bring in, and buying copious amounts of popcorn, but I hate how commercialized and “un-local” they make the food supply industry feel. I do have to say, however, Costco has recently started carrying an outstanding product that is completely plant-based and HEALTHY, with no weird and harmful ingredients! After tasting this dip at friends’ houses, I decided this Queso Plant-Based Dip, would be a simple dip to recreate.

The ingredients in this dip by Good Foods are all excellent. Surprisingly, they don’t use any added oils, preservatives, or artificial anything, as they say! Just real vegetables, spices and tasty plant-based ingredients. Think cauliflower, red peppers, onion, garlic, nutritional yeast and spices… And, it is a family run business out of Wisconsin. So, if you don’t feel like making it, by all means, go pick it up and enjoy!

Costco’s Queso Dip

How to make your own simple Queso Plant-based Dip:

I have made my version a couple of times now and it has been a HUGE hit with my family. Suffice it to say that it is gone within an hour of being made, and it tastes identical to Costco’s Queso Plant-based dip!

I just experimented with the amounts until I got the taste and the consistency correct. Bam! The result is a completely whole food Queso Plant-based Dip that tastes like a cheese dip without the saturated fat, hormones and illegible ingredients. No mama cow and her baby were harmed in the making, and our earth was treated with kindness during the creation of these ingredients. Does it get any better than this?

Queso Dip

Queso Plant-based Dip

Nutrition facts: 200 calories 20 grams fat

Ingredients

  • 2 cups chopped cauliflower
  • 1 cup sliced red peppers
  • 1/2 cup almonds (soaked in water, then drained)
  • 1/2 cup water
  • 1/4 cup red onions, chopped
  • 2 tablespoons almond butter
  • 2 cloves garlic
  • 2 tablespoons nutritional yeast
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon lemon juice
  • 1/2 tablespoon chia seeds
  • 1/2 teaspoon salt
  • 1/2 teaspoon cumin
  • 1/2 teaspoon turmeric
  • 1/8 teaspoon cayenne pepper

Instructions

  1. Place almonds in a bowl and cover with water to soak while you are preparing the other ingredients. (You could soak for a couple of hours ahead of time if you have the time.  This is only necessary if you do not have a high powered blender like a Vitamix.)
  2. Wash and chop the cauliflower, peppers, red onions and one garlic clove.  Steam in a pot until tender.
  3. Place all of the other ingredients into the blender and add steamed  vegetables.  Blend together until smooth.   
  4. The queso sauce will be warm.   Refrigerate until needed or serve immediately with veggies, tortilla chips, fried tofu, sweet potato fries, roasted potatoes, cooked vegetables, or anything else your heart desires!
