Recently, I was scrolling through social media and happened upon a video of man making a similar dish to this one. He was filling the pan with animal products, copious amounts of cheese and no vegetables. (Horror!) I thought to myself, “Great idea, but man, it needs some modifications!”. This led me to creating this Pasta in a Pan. It’s filled with great ingredients but not overloaded with too many green things, so no one will get scared off. 😉
These past two weeks have been brutal in our world, what with the devastating fires both in Lahaina and right here in our own city of Kelowna. Hundreds are still unaccounted for on Maui, thousands are displaced here, fires still rage and the air is dangerously smoky. People are experiencing PTSD from the return of masks to keep out the soot and the overall energy is pretty low.
Humans are craving comfort and solace right now. We took in some new friends while they were on evacuation order and once again we experienced that there is truly something magical about ‘breaking bread’ together. Meals and connecting certainly eases the pain during difficult times. In my mind, there is nothing like a good, steaming, home cooked meal to help you feel better. Even if it is just for a few moments.
My daughter’s firefighter friend was visiting a couple of weeks ago. We were out learning to E-Foil (ouch), so I popped this quick Pasta in a Pan in the oven to have ready when we came up for dinner. (Noah is out there right now working 30+ hour shifts in Lake Country saving peoples homes.) Amazing job young man. THank you.
His comment on this dish was, “That just might be the best home cooked pasta I have ever had!”. Melt my heart. Makes me think maybe tomorrow I should pack a couple up and take them to the fire hall for the first responders to share.
As I type this, I am hearing the first rumblings of thunder. Lordy, let there please be just rain and no lightning strikes. Weather is coming up from the tropical storm in California. Hopefully that is good news not the start of more problems. As I look out my window it is as if there is a light snow, barely perceivable, falling. It’s ash, not precipitation.
Pasta and garlic in the casserole dish.
Add non-sweetened plant milk.
Add all ingredients to the pan and stir until well mixed.
Press ingredients down below the liquid level so it bakes properly.
Bake at 375 degrees Fahrenheit for 45 minutes..
Baked and ready!
It’s not the most beautiful dish I have ever made, but man, it hits the spot!
(If your oven runs hot, reduce heat to 375 degrees.) Www.thevibrantveggie.com You can substitute any veggies that you like such as: zucchini, cauliflower or mushrooms.
Also, adding 1/4 cup of capers or olives can add a nice flavour. Adding a small amount of finely chopped kale, basil or Swiss chard is great too.Ingredients
