3 minute Chocolate Lava Cake

Last night I went out for dinner to the Cactus Club with my eldest daughter and her boyfriend to meet his mom for the first time.  It was a lovely night of conversation and flavour.  I tried their vegan tofu lettuce wraps and was quite impressed.   As you may know, they have a great Chocolate Molten Lava cake on their menu.  My daughter was craving it and I mentioned to her that years ago I used to make a similar one in single serving bowls that was super easy and quick to whip up for a treat.  I guess between that and realizing that Valentine’s Day is one week away, I started thinking about chocolate.  Of course, as you know, when you start thinking about chocolate you sometimes start craving chocolate, and then sometimes you end up eating chocolate…  Well, this is the kind of afternoon that presented itself to me. 😉  You know, always taking one for the team… trying out new recipes for my readers!

That process got me digging out old recipes and thinking about how to make that delicious lava cake just a little more nutritious!  No more eggs and butter and milk and hormones and cholesterol and all that yucky-ness… just a gooey chocolatey dessert that oozes.  Yup, it oozes chocolate for real.  This recipe should do it for you.  It can literally be ready in 3 minutes.  Make one serving, or 10… you can’t mess up because you make one dessert per bowl.  Use little bowls, ramekins or mugs.  Make it cozy and blame it on this damn Arctic Front that just won’t buzz off.  I tried to keep it as healthy as I could without going all whole grain flour on you.  My kids say I always ruin desserts doing that so I spared you today!  

Ok, I have tested enough trials and I don’t think I will be craving chocolate now until at least Valentine’s Day!  My gut microbiome is not impressed with me. 

3 Minute Chocolate Lava Cake

Serves: 1 Prep Time: Cooking Time:
Nutrition facts: 200 calories 20 grams fat

Ingredients

  • 1/3 banana  (if you don't want a banana taste, use 2 tablespoons of applesauce)
  • 2 tablespoon unbleached white flour
  • 3/4 tablespoon maple syrup
  • 1 1/2 tablespoons cocoa
  • 3 tablespoons soy or almond milk
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon olive oil
  • 10-15 vegan chocolate chips
  • optional - for an orange flavour, grate a 1"x 2" section of orange peel

Instructions

  1. Mash 1/3 of a banana, or place 2 tablespoons of applesauce into a small microwavable bowl, ramekin or mug.
  2. Add the remaining ingredients and whisk until smooth.  If the container is more than 2/3 full, you may want to switch to a larger one so it doesn't overflow.
  3. Drop the chocolate chips into the centre of the dish and press until just below the surface of the mixture.
  4. Wipe the messy sides of the bowl with a paper towel.
  5. Cook in the microwave for one minute.  If it cooks too long, it will be more like a cake and won't have the ooze factor.
  6. Serve warm immediately.  Delicious topped with raspberries and a plant-based vanilla ice cream!

This sounds amazing. I wouldn’t have thought I could make a chocolatey dessert so fast. Definitely trying this one!!
