Quick Pickled Onions

Lately I have been loving pickled and fermented foods such as sauerkraut and pickled onions more and more.  One of our favourite “fast food” restaurants, Mucho Burrito, has pickled onions as one of their options and I love to load up my burrito bowl with them.  It got me thinking that making pickled onions must be a very easy thing to do.  I googled it the other day and sure enough it takes about 5 minutes of your time and only has to sit for about half an hour before being ready to use.  A few days ago we were making buffalo cauliflower burgers (recipe link here) and I thought it would be great to be able to have pickled onions as a topping.

Making pickled onions requires very simple ingredients.  Likely ones you already have in your pantry.  It can be prepared in only a few minutes and is super easy!  They will last in your fridge for a long time as well as they sit in their brine.

 

Quick Pickled Onions

Ingredients

  • 1 large onion cut in 1/8 inch rounds and separated into rings (red onion has a gorgeous pink result)
  • 1/3 cup white wine vinegar
  • 1/4 teaspoon sugar
  • 1/4 teaspoon salt
  • 1 garlic clove cut in half
  •  

Instructions

  1. Boil a kettle of water.
  2. Place onion rings in a large glass or ceramic bowl.
  3. Pour boiling water over onion rings until covered.  Let sit for 2 minutes and then drain.
  4. Boil vinegar, sugar, salt and garlic in a medium saucepan until the sugar dissolves.   Remove from heat and add onion rings.
  5. Press onions into liquid and let sit for at least 30 minutes.
  6. Use immediately or refrigerate.

Notes

Pickled onions are great eaten as a side, on veggie or bean burgers, on top of "meat loaf" or even on salad!
