Because I eat plant based, it is harder now when I am eating away from home, to find plant based desserts. Because of my rule with myself not to eat dairy and eggs, it makes it easy to not cave in to temptation. Although I have definitely noticed a reduction in the amount of sweets I am craving, sometimes it’s nice to bake a little something as a treat.
I came across these treats on www.runningonrealfood.com and have to say they are super simple and delicious! Tough to only eat one! I made them yesterday (doubled the recipe) and between the 5 of us in our household, 24 hours later they are half gone. The good news is they are not that bad for you.
Ingredients
- 2 cups rolled oats (or quick oats)2 ripe bananas, mashed1/2 cup peanut butter ...you know, the brands with only one ingredient - peanuts! (I used chunky, but either would be delish)Optional add-ins: -1 Tbsp maple syrup -1/2 tsp sea salt -1/2 tsp vanilla -1/4 cup dairy-free dark chocolate chips (or raisins)
Instructions
- Preheat oven to 350 degrees.
- Mash the bananas in a bowl with a potato masher or fork.
- Add the rest of the ingredients and mix well.
- Drop spoonfuls onto parchment paper covered cookie sheet. Shape into a round shape if you like uniformity, 😉
- Bake for 15 minutes until firm and very slightly brown.

Omigosh!! Only 3 ingredients???!! Love it. This is my kind of recipe. I might serve these for dinner……just kidding! But i will be making some NOW. Thank you!! 🙂
Isn’t it great?!! It can make a great pick me up to take on hikes or cross country skiing this winter! 🙂
