BABZ Chocolate Walnut & Seed Brownies

Everyone loves a good brownie. The best ones not only have a soft, chocolatey taste, but also contain wholesome ingredients! These healthy BABz Chocolate Walnut & Seed Brownies are the result of many tries at getting the recipe just right! You know it’s a winner when there are only 5 of you and the pan is gone in 20 minutes. 😉 And of course it is super important that I remake it numerous times to ensure it is JUST right before posting the recipe!

Myrna, from BABZ Bodacious Artisan Breadz, asked me to help come up with some recipes for their products. She had a life changing health crisis that inspired her to create these products. You can read her impactful story here.

(If you are not from BC, I have posted an alternative to using the BABz product… You can blend up some seeds in no time for the same effect.)

What makes these Chocolate Walnut & Seed Brownies so special?

I understand the need to have something simple to whip up on hand, but also see the value of making things from scratch. I mean most of the time… Trust me, sometimes I just want it premade! It makes me nervous when I look at the ingredient list and wonder what exactly those “food products” are that I can’t pronounce. Are they actually safe to feed to my family?

This recipe contains seeds such as hemp, flax, sunflower, chia, as well as walnuts and whole grain flour. (Or you can substitute with an alternative flour to make it gluten free.)

These brownies offer servings of nuts and seeds as well as a healthy dose of omega 3’s (from the flax, chia, hemp seeds, and walnuts). Any time you can squeeze out a little nutrition from foods, like brownies, that traditionally don’t offer much value, the better!

All the things! Free of everything but good whole ingredients: only blended seeds!

BABz Chocolate, Walnut & Seed Brownies

Ingredients

  • 1 cup Bodacious Artisan Breadz Classic mix, or Keto mix (*see note below for options if you can't access this product)
  • 1/2 cup chocolate chips, plus 2 tablespoons
  • 1/3 cup walnuts, chopped
  • 1/3 cup whole wheat flour (can be substituted with gluten free flour)
  • 1/3 cup soy milk (or other plant-based milk)
  • 1/4 cup maple syrup or cane sugar
  • 2 flax eggs, (2 tablespoons of ground flax seeds mixed into 6 tablespoons of water and allowed to sit for 10 minutes)
  • 2 tablespoons cocoa powder, sifted
  • 2 tablespoons olive oil
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Instructions

  1. Preheat oven to 375 degrees Fahrenheit.
  2. In a small(ish) bowl, mix the flax eggs and allow to sit while mixing up the dry ingredients.  Stir frequently.  It will thicken into an egg like consistency.
  3. Chop the walnuts.
  4. In a medium sized bowl, mix together the * Bodacious Artisan Bread mix, chopped walnuts, half a cup of chocolate chips, sifted cocoa powder, flour, baking soda and salt. 

    * (If you can't access BABz products where you live, blend together 1/4 cup each of four of the following: sunflower seeds, pumpkin seeds, flax seeds & hemp seeds, chia seeds, or rolled oats, along with a pinch of salt)

  5. To the bowl containing the flax egg mixture, add the soy milk, maple syrup (or sugar), olive oil and vanilla.  Stir well. 
  6. Pour the wet mixture into the dry mixture and stir until well mixed. 
  7. Lightly grease a 9x9 pan with oil.  Pour the mixture into the pan and bake at 375 degrees for 25 minutes.
  8. After 25 minutes, remove the pan from the oven.  Sprinkle two tablespoons of chocolate chips on top and return to the oven for 5 minutes.  It tastes best if the edges of the brownie become a little bit crispy.
  9. Remove from the oven and allow to cool for 10 minutes before serving. 
  10. Best served warm with a plant-based vanilla ice cream!
